Behind the winery there is a the Mont Mary at 2815 m s.l.m. where our highest vineyards lie. It’s the protector of our estate and the surveyor of our highest vineyards. It’s source feeds the highest vines.

To celebrate its existence we named our iconic sparkling wine after this important mountain.

Montmary is a classical method sparkling wine that rests for 15 months on the lees.

A bright rosé wine with pronounced minerality and acidity expresses the elements of our terroir.

Altitude:
800/900 mt asl

Soil:
Sandy grain size typical of the region with little depth (less than 50 cm). Abbundance of stone residue.

Agricultural operations:
manual and partly mechanical weed control 3 times a year, harrowing and sowing on alternate rows. Fertilisation with bovine manure every 5/6 years. Management of cryptogamic dedeases using exclusively copper and fosphate.

International varieties

Vinification:
Presssing of whole cluster and maceration of a few hours. Alcoholic fermentation in stainless steel tanks with selected yeasts, at low temperatures.

Ageing:
Stainless steel at 5/7°C

January

Disgorgment:
After 15/18 months on the the lees

Colour:
Bright rosé

Aroma:
fruity and floral. Pronounced citric scents of the varieties.

Flavour:
Crisp, full flavour
