Rovettaz is the oldest vineyard of the family business that is made unique by the its production of excellent quality grapes that go into the production of the Torrette.

It is distinguished by a bright, intense ruby colour. The intense fruits of the forest are mature and scented by violets and wild roses that blend with the spiced notes.

A burst of red fruits lingers on the palate and the light acidity balances out the tannins.

Good pairing with red meat dishes and poultry.

Potential ageing in the bottle of 10 years

Soil:
Sandy grain size typical of the region with little depth (less than 50 cm). Abbundance of stone residue.

Agricultural operations:
manual and partly mechanical weed control 3 times a year, harrowing and sowing on alternate rows. Fertilisation with bovine manure every 5/6 years. Management of cryptogamic dedeases using exclusively copper and fosphate.

Variety:
Petit Rouge 75%, 10% Fumin, 10%, Cornalin and 5% Premetta

Vinification:
Destemmed grapes in maceration performing punch down operations, 3 times a day at controlled temperatures of 28/30 C°

Ageing:
3000 lt oak cask for 12 months and 6 months in the bottle

Colour:
Intense ruby red with bright reflections.

Aroma:
The intense aroma is mainly of fruits of the forest but violet, floral notes are detectable as well as scent of wild rose and sweet spices.

Flavour:
These red fruit flavour burst in the mouth and are intensified by the mineral note. A light acidity balances our the tannins.
