An sun kissed aspect at 700 mt of altidute hosts the Cornalin variety that has only recently been rediscovered for its unique personality and ageing potential.

It presents an intense ruby red colour and its aroma is ample and spiced with hints of tabacco. A full finish with pleasant tannins identify this low acidic wine.

Ideal with meat and our local soups but pairs well with cheese, in particular our Fontina DOP.

Soil:
Sandy grain size typical of the region with little depth (less than 50 cm). Abbundance of stone residue.

Agricultural operations:
manual and partly mechanical weed control 3 times a year, harrowing and sowing on alternate rows. Fertilisation with bovine manure every 5/6 years. Management of cryptogamic dedeases using exclusively copper and fosphate.

Vinification:
Destemmed grapes in maceration performing punch down operations, 3 times a day at controlled temperatures of 28/30 C°

Ageing:
In oak tonneaux for 8 months and 6 months in the bottle

Aroma:
fine and ample with spiced notes that evoke tabacco.

Flavour:
Soft, full , pleasantly tannic, persistent and low acidity make up the palate of this wine.
